Applesauce Cake

2 1/2 c whole wheat flour, finely ground
2 c sugar
2 T dried whole egg, sifted
1 1/2 t salt
1 1/2 t baking soda
1/4 t baking powder
1/4 t cinnamon
1/4 nutmeg
1 1/2 c applesauce
1/2 c shortening
3/4 c water
1 c raisins
1/2 c chopped walnuts
Combine all ingredients in a large bowl; beat with mixer at medium speed for 3 minutes (450 strokes by hand with whisk). Pour into greased 9 x 13 inch pan. Bake at 350 degrees fro 60-65minutes until cake is done (toothpick inserted in center comes out clean). Cool. Frost or serve topped with applesauce and imitation whipped cream.

Try a maple glaze on top: 6T powdered sugar, sifted and 3-4 T maple syrup. Stir until smooth. Drizzle over top.
